There are a lot of clicks to assign a task to someone. It would be nice to do the "Search" directly from double clicking in an "Assign To" field.

Additionally, the ability to type the name you are searching for and press Enter, rather than having to use the mouse to click on Search would be time saving.

Finally, the ability to "assign" a task to not only non-users, but non valid emails. Such as "Operations" that isn't tied to any one person, just notated.
